Simple Duck Breast cooked in a cast iron fry pan.

Ingredients
  • Duck breast
  • Sea Salt - fine grind
  • Black Pepper
  • Paprika
  • Onion Powder
  • Olive Oil
Instructions
  1. Trim any excess from the underside of the duck breast.
  2. Cut a crosshatch pattern across the fatty side of the duck breast about 50% depth of the fat.
  3. Sprinkle the salt, pepper, paprika and onion powder over the fatty side of the duck breast and then rub it in.
  4. Let the duck breast sit with spices for anywhere from 10 minutes to an hour, if more than 15 minutes then put it in the refrigerator.
  5. Pre-heat oven to 400°. While the oven is heating, put the fry pan in the oven.
  6. When the oven reaches temp, take out the pan and put it on the stove top with a high heat.
  7. Put 1 teaspoon of the olive oil into the pan and spread over the bottom.
  8. Place duck breast into the pan, fat side down for 5 minutes.
  9. When 5 minutes is up, flip the breast(with tongs) over, and then place the fry pan in the oven.
  10. Cook in the oven for 15-20 minutes depending on thickness of breast.
  11. Test at 15 minutes, breast should be a medium firmness to the touch, if it jiggles like jello then it needs a little more time.
  12. Remove pan from the oven, and remove the breast from the pan to a cutting board.
  13. Let the breast rest for 5 minutes, then slice at an angle and serve immediately.
Notes
Degree of being done is inexact since it can vary depending on personal preference and size of the breast. 15 minutes for a .90 - 1.1lb duck breast is in my opinion.

Save any fat from the cooking process to use for something else, it is delicious as an additive to roasted potatoes or as grease in a pan for fried eggs for example.
